Zucchini Slice


  • 1 ½ large zucchini’s
  • 3 rashes of rind less bacon finely chopped (or ½ cup finely chopped mushrooms)
  • 1 onion finely chopped
  • 1 cup grated cheese
  • 1 cup SR flour
  • 5 – 6 eggs slightly beaten (try eggs seperately first)
  • ½ cup olive oil


  1. Place all ingredients into a large mixing bowl
  2. Mix with a wooden spoon until combined
  3. Pour mixture into a well greased lamington tin
  4. Bake in a moderate oven for 30 – 40 minutes until golden brown on top
  5. Cool on wire rack
  6. Serve with favourite dipping sauce
